This cut of ostrich meat is popular for its delicate tenderness. Due to the tenderness it is a great cut to be served as "Carpaccio" (Italian appetizer consisting of raw red meat sliced thin and drizzled in olive & lemon juice, and finished with capers).   If you are not a master chef or into experimenting with recipes; you can still use this cut many ways for a great meal!
